Hazelnut wafer
A beautifully sweet, nutty coffee that does not lack the pleasant acidity of red fruit. The taste is dominated by notes of hazelnuts, cocoa wafers and stone fruit. The coffee is full-bodied and its texture is reminiscent of nut butter. On the filter it is a juicy, nutty coffee with notes of cranberry, hibiscus and cocoa. On espresso, the acidity is reminiscent of caramel apples and notes of apricots, pecans and cocoa in the aftertaste.
Mexico is one of the countries in which specialty coffee has experienced a great upsurge in recent years. The quality of local coffees is increasing year on year and Mexican coffee is appearing more and more often in our production too. Further proof of the excellent quality of Mexican coffees is this lot from El Plátano, a farm in the Chocomán region of Veracruz state. The farm is run by Marisol Ramirez Serrano, who has been growing coffee since she was 19 years old. She gradually acquired the necessary knowledge and skills under the guidance of her father and today oversees the running of the farm and the local roastery. The biggest challenge on this farm is climate change, which causes frosts, but also excessive heat. Marisol has a difficult road ahead to maintain the quantity and quality of production on her farm. However, despite these obstacles, her passion for specialty coffee and maintaining the highest quality of production has not waned.
The lot we have selected from Marisol is a blend of Bourbon and Typica varieties processed by the washed method. After picking, the cherries were stripped of defective grains and then de-pulped and washed. The beans were then left to rest for 20 hours and finally dried in a guardiola for a further 22 hours. The beans were then transferred to sacks and the final step in the process was the stabilisation. The beans are then stored in a controlled environment for a further 4 months before it is finally ready for export.
This coffee has everything we expect from a good coffee. Clarity in taste, a pleasant texture and plenty of sweetness. If you haven't tried coffee from Mexico yet, this is the perfect chance!
