Chai Spice Nougat

This coffee from India will surely surprise you, as it did us! Expect a full body, cane sugar sweetness and dried fruit acidity. The flavour is dominated by notes of chai spice, nougat, pear and dried figs. The sweetness, nice texture and notes of pecans and cane sugar stand out when prepared as filtered coffee. On the espresso, notes of nougat, dried apricots and spices dominate, along with medium acidity and high sweetness. 

It's hard to believe, but even after more than 10 years of roasting, we're still adding coffees that we never had before. And so, for the first time, you can taste coffee from India! Our Chicas Industry importers have managed to expand their portfolio just to include India, which is why we have selected this lot from Hulikere Farm for you.

Hulikere is one of three farms that Shreedev and his wife Sushmita manage. The farms are located in the Baba Budan Giri Hills area of Western Ghats and the Hulikere family has been growing coffee here for three generations.

Coffee is grown on these farms in a traditional polycultural shady landscape and, thanks to the KaadKaapi wildlife organisation, the local forests are home to many endemic species of birds and mammals.

The lot we have selected is of the S795 variety, which was introduced in India in the 1940s. It is a high-flavour, high-yielding and hardy variety. This makes it a very popular and widely cultivated variety. Ours has been processed using the traditional washed method, which gives the coffee a clarity of flavour. After the beans are de-pulped and then washed of the remaining flesh, they undergo a dry fermentation process that takes 18 hours. The coffee is then dried for 11 days in the shade on the terrace.
