Chocolaty & Smooth
This coffee will win you over with its great drinkability! It is smooth, sweet and has a very pleasant acidity. The flavour is dominated by notes of milk chocolate, red grapes and citrus. On the filter, it is a medium-bodied coffee with a velvety texture and a lingering cocoa aftertaste. Chocolate-covered chestnut puré, oranges or plums stand out in the taste. On espresso, it is a juicy, fruity coffee with a light body, white peach sweetness and citrus acidity.
After a long time, we are getting coffee from Central America, namely from our favourite Costa Rica. This time it is a new collaboration with a farm from whose production we will have coffee for the very first time. This time, however, it's again from our new partners The Coffee Quest and once again it's a hit!
The coffee comes from the Cuantro Vientos farm, located near the town of Santa Maria in the canton of Tarrazú. The owner of this farm is Solsiré Solís Cordero, daughter of Ivan Solís and Leadra Cordero. Their family has a long tradition of coffee growing and they are currently one of the main drivers of the local coffee community. In 2018, Ivan and Leandra founded Beneficio Santa Fe Farm with the goal of not only producing great coffee, but also elevating their farm's reputation to a world-class level. This year, they won the Cup of Excellence competition in the experimental coffee category. And we hope this is just the beginning of their success for this farm.
Experimentation and innovation in coffee processing is something that is highly emphasized on their farm. For this reason, since 2017 they have been working with the Brazilian company CormaCafe, with whom they have been developing and testing new ways of processing coffee and creating unusual flavour profiles.
This lot of the Yellow Catuai variety has been processed using the Yellow Honey method, in which the green beans are dried without the pulp with the remaining pulp. After picking, the cherries are left to ferment for 30 hours and then washed with clean water and de-pulped. The green bean is then placed in fermentation tanks for a short period of time and then immediately transferred to drying beds where it is dried until the moisture content drops to 10 %. Thanks to this processing, the coffee has plenty of sweetness and a delicate texture, while retaining clarity in flavour. Simply a coffee to our taste!
